Creamy Broccoli & White Cheddar Soup

Ingredients:

1/2 stick of butter
2 garlic cloves, minced
1 small yellow onion, diced
3 tablespoons flour
2 cups vegetable stock
1 large head of broccoli cut into small pieces
2 cups heavy cream
2 cups shredded white cheddar cheese
Salt & pepper to taste

Directions:

In a large pot or Dutch oven, melt butter over medium-high heat. Add garlic & onion and stir for 3 minutes. Add flour and stir for another minute. Add vegetable stock & broccoli and bring to a boil. Cover and lower heat to a simmer for 15 minutes.

Add in heavy cream and cheese. Stir until cheese is melted. Season with salt & pepper to taste. Using a regular or immersion blender, blend mixture until smooth. Serve with toasted bread and enjoy!
