Air-Fried Buffalo Cauliflower Salad

Serves 2 people as an entrée or 4 people as an appetizer

Ingredients:

1 head cauliflower, cut into florets
1/3 cup of your favorite buffalo sauce (my favorite is Sweet Baby Ray’s)
Spray oil (optional)
1 head butter lettuce, chopped
1/4 cup red onion, finely chopped
1/3 cup carrots, chopped
1/3 cup celery, chopped
Ranch or Blue cheese dressing
Juice from 1/2 lemon
Blue cheese crumbles

Directions:

Preheat air fryer to 400 degrees F. In a large bowl, combine cauliflower and buffalo sauce. Toss until evenly coated. In 2 batches (depending on the size of your air fryer) place the coated cauliflower florets. It’s OK if they touch each other. I like to spray mine lightly with some spray olive oil and toss a bit. Then cook for 10-12 minutes until well cooked and browned, shaking the basket once halfway through.

Do the same thing with a second batch if needed. While cauliflower is cooking, assemble salad with a bed of lettuce, onion, carrots & celery. Place cauliflower on top and drizzle with your preferred dressing. Top with fresh lemon juice and blue cheese crumbles. Serve and enjoy!
