Heirloom Tomato Soup

Ingredients:

5-6 large heirloom tomatoes cut into chunks
4 large garlic cloves, peeled
Olive oil
Salt & pepper
8 basil leaves plus more for garnish
1/4 cup whole milk or cream
Croutons (either homemade or store bought)

Directions:


Preheat oven to 400 degrees F. In a large dutch oven or other oven safe pot, add tomatoes, garlic cloves and drizzle generously with olive oil. Season with salt and pepper and place uncovered in the oven.

Roast for about 45 mins until juices from tomatoes have released and garlic cloves are soft. Add basil leaves, milk/cream and additional salt and pepper to taste. Blend with immersion blender until smooth. Can also ladle into a traditional blender and purΓ©e instead.

Can serve hot or refrigerate overnight and serve chilled. Ladle into small bowls and top with a drizzle of olive oil, basil leaves and croutons.
